Canadian Duck Product Exports

The duck product market is divided into four main segments:

whole birds

duck cuts (e.g., breast)

offal and foie gras

prepared meals

All four types of products can be sold frozen, fresh, or chilled.

Canadian imports are primarily composed of duck meat cuts and prepared meals. Significant volumes of whole birds were imported in 2016 and 2017 for the reasons previously mentioned.

Canada exports the majority of its duck products in frozen form—including whole ducks, foie gras, and duck meat cuts.

In 2017, Canada exported 2,181 tonnes of duck meat, including 44% as duck cuts and 33% as foie gras, either frozen or fresh/chilled.
