Our duck producers specialize in three main species :

A hybrid of the Muscovy and the Pekin, the Moulard is reknowned for its rich foie gras, plump magrets, and delicious confit.

Originally from China, the Pekin is a favourite among Asian chefs for its flavourful meat and the tasty eggs laid by its hens.

Domesticated from a wild American breed, the Muscovy is prized for its fine, flavourful, and exceptionnally lean meat, as well as its top quality foie gras.
Duck offers a wide variety of fresh cuts — from legs and magrets to tenderloins — along with a broad selection of transformed products such as sausages, seasoned wings, burger patties, pulled duck, bacon, and fine charcuterie.
Fresh duck cuts come in many forms: whole or half duck, ground duck, legs, magrets, tenderloins, cubes, supremes (with or without the wing bone), and even chops.
Prepared duck products include sausages, cured and smoked specialties (mousses, terrines, rillettes, dry sausages, bacon, smoked or dried magrets, etc.), stuffed breasts, pâtés and meat pies, confit legs, pulled meat, boneless wings, thin slices for hot pot, burgers, meat sauces, and more.
And let’s not forget the growing list of other delicacies: offal that can be cooked or confit — such as heart, gizzards, and tongue — as well as duck eggs, prized for their rich flavour and higher nutritional value compared to regular eggs, making them a favourite among food lovers.
